Run out of shop-bought gluten-free flour mid-recipe? You can mix a balanced all-purpose blend from rice flour and a couple of starches. Put in how much your recipe needs and this gives you the grams of each, plus how much xanthan gum to add. It all runs in your browser; nothing is sent or stored.
Two reminders: this is only gluten-free if every ingredient is certified gluten-free, since rice flour and starches are often milled on shared lines. And xanthan gum is what replaces gluten’s stretch — use a little less for tender cakes and a little more for yeast breads.
